Roaster’s Blog: Colombia Estate
Today I brewed a batch of Colombian Estate, which at this time of the season is our Organic Don Telmo Reserva Bourbon Roasted on May 12th. This coffee is grown on a sustainable farm, which is Bird Friendly, Rainforest Alliance and Certified shade grown, which basically means this coffee is grown in the rainforest of Colombia, has a minimal impact on the environment, and provides cover for many types of birds.
As is my morning ritual I set aside a cup black to drink for tasting purposes and then I have it with Cream and sugar to also get the taste that way. I like to take in the full tasting experience, first the aroma, then the flavor. The aroma on this coffee was very enticing, creamy and nutty almost like a pecan, then the taste and whoa what a nice coffee! The first thing I noticed in the flavor was that of sour cherries, bittersweet cocoa, then creaminess and very, very smooth, no bite to this coffee. It’s rare in my opinion to find a coffee with a nice acidity to it and to be so smooth. The coffee finishes with what I would call a dry aftertaste, which is in my experience a typical Bourbon Varietal trait, which is pleasant and a lingering fruitiness. I then poured myself a cup with cream and sugar; this further brought out the creaminess and brought cocoa and nutty flavors to the forefront.
In my opinion this coffee is a winner from start to finish.
