Pumpkin spice lattes have become synonymous with fall and it’s easy to see why. As the weather becomes chilly, the drink connects us to all the inviting elements that change with the season; layered clothing, the crunching of leaves, and the taste of a cup of freshly brewed coffee, this time with a sweet note.
Since it’s a new season, we think it’s time to put our own spin on a seasonal favorite, the pumpkin spice latte, one that you can make in the comfort of your own home without needing an espresso machine! We call it the Legendary Pumpkin Spice Latte and we think you’ll love it. Our Legend Blend makes the perfect coffee concentrate and balances the sweetness of the pumpkin sauce. This delightful recipe uses real pumpkin, which means it’s delightfully rich.

For the coffee concentrate:
25 grams One Village Coffee Legend Blend
For the pumpkin base:
2 Tbl canned pumpkin puree
½ Tsp pumpkin pie spice
Dash of black pepper
2 Tbl sugar
¾ C whole milk
2 Tbl vanilla extract
For the pumpkin whipped cream:
½ C heaving whipping cream
1 Tbl pumpkin puree
2 Tsp sugar
Dash of pumpkin pie spice
Step 1: Make the pumpkin base
Put your 2Tbl of pumpkin puree in a small saucepan over medium high heat and mix with the pumpkin pie spice. The purpose of cooking down the pumpkin first is to reduce the vegetal flavor. After about 5 min, add 2 T of sugar. Stir until it becomes a viscous sauce. After the sauce bubbles slightly add the milk and vanilla. Whisk together until the mixture is combined and there are no clumps. Bring to a low simmer and remove from heat.
Step 2: Brew the coffee concentrate
The easiest way to brew your concentrate is using a pour over method of your choice. If you don’t have a pour over method, you can use a drip brewer, but because of the larger brewing format you’ll want to increase the amount of coffee to 75 grams (5 tablespoons) and the water to 600 ml (2.5 cups). Grind and brew as you normally would.
If using a pour over method, grind your coffee as you normally would, but brew for the length of time you would brew a regular strength pour over. For example, if you brew a normal strength cup of coffee for 2:30 min, pour for the same amount of time to make the concentrate. This will ensure the coffee isn’t under extracted.
Why it works:
Normally when brewing coffee, a 16:1 ratio of water to coffee makes for the best strength and flavor. With this recipe, we’re cutting that ratio in half to 8:1. The coffee is double the strength of a normal brew, meaning it will cut through the milk and pumpkin mixture.
Step 3: Prepare the whipped cream
Place the heavy cream, 1 tablespoon of pumpkin puree, 2 teaspoons of sugar, and dash of pumpkin pie spice in a chilled bowl with a wide, flat base. Whisk to soft peaks. Alternatively, you can do this with a mixer or immersion blender.
Step 4: Assemble and enjoy!
Pour your pumpkin milk mixture into your favorite mug. Add 100ml (~3oz) of your coffee concentrate and stir. If desired, add more of the concentrate to taste. Top with pumpkin whipped cream. Sprinkle with pumpkin pie spice and brown sugar if desired.
