Las Nubes is Roberto Mata’s coffee farm in the famed Tarrazú region of Costa Rica. Señor Mata is a leader in Costa Rican coffee production and is former manager of the influential co-op Coopedota. He’s an innovator with an eye toward quality, and his coffees are a special treat.
This lot employs his unique and innovative process which he calls Juicy Natural. It starts with a 72 hour anaerobic fermentation with the ‘juice’ of a previous batch followed by a combination of raised bed and mechanical drying, and finally a winemaker-like blending process with other natural process coffees to achieve his desired flavor profile. The results are stunning. The coffee is syrupy, winey, and brimming with fruit juicy goodness. We find notes of raspberry preserves, concord grape, tropical fruit, orange zest, and a wisp of fudge.
