The coffees we source for Daybreak are fully traceable washed process coffees from Central and South America. This year, we are buying from Colombia and Honduras with Peru on the horizon.
Honduras San Vicente
Beneficio San Vicente is an exporting outlet located in the department of Santa Barbara. The coffees coming out of this hub are phenomenal, and the Paz family behind it all have played a pivotal role to shine a bright light on their region. Farmers here on average have quite small farmers, about 3 Ha. We purchased the SHG (“super high grown”, over 1200 m.a.s.l.) community lot for this coffee.
Farmers who contribute to the SHG lot process their coffee with the washed method. Cherries are de-pulped, fermented in open tanks overnight, and then washed and dried in greenhouse structures for 1-2 weeks on mechanical dryers.
Benjamin Paz, in line with the mission of his family since the 1950s, is the one who has really helped put this area on the map, and he has become a reference for Honduran Specialty Coffee. The thing we love about this group is how no farmer is left behind, between micro lot producers and those who contribute to the community lots, San Vicente finds buyers for all of their coffee. A rising tide raises all ships!
Colombia Huila Coocentral
COOCENTRAL (Cooperativa Central de Caficultores del Huila) is located in the Huila region of Colombia and is dedicated to producing high-quality, specialty coffee with a strong emphasis on sustainable and eco-friendly farming practices. Numerous smallholder farmers make up COOCENTRAL.
We love Huila coffees, and COOCENTRAL is no different. Characterized by bright acidity, balanced clean flavors, and notes of citrus, cherry, florals, and caramel. These coffees are grown at 1,200 - 2,000 m.a.s.l. The farmers do all the processing on their farm: pulp, ferment, wash and dry.
Community development and environmental stewardship are core values of COOCENTRAL. The cooperative provides extensive training in sustainable agriculture to its members, promoting environmentally responsible coffee production and the preservation of the local ecosystem. Additionally, COOCENTRAL is actively involved in various community initiatives, focusing on education and social development.
ROASTERS
We pre-book these coffees through importers before they leave the country, contracting tens of thousands of pounds each harvest cycle. This approach strengthens our supply chain and enhances sustainability. When importers know the coffee is already sold, they face less risk and fewer financing fees. It also allows producer groups to move their coffee faster, resulting in fresher beans for us!
Here is the quick and dirty breakdown on how these coffees are traded. Because these coffees are higher quality, farmers receive quality bonuses from the exporter. The price the exporter gets is based on the market when they finalize their contract with the importer. Similarly, the price we pay as roasters depends on the market when we fix our contract. Ideally, exporters lock in prices when the market is high, and roasters when the market is low.
COFFEE LOVERS
The goal for Daybreak is to source affordable community lot coffees that are clean and balanced. Washed process coffees provide a cup profile that has a little more crisp acidity, so you will pick up on notes of baked apple, praline, and citrus. Bitterness is low, and the body is medium. This is for the coffee lover who enjoys a crisp cup, something with a little character and liveliness. This coffee performs best on manual brew methods and auto-drip. We would not recommend this for espresso or cold brew.
