FARMERS
The coffees we source for Daybreak are fully traceable washed process coffees from Central and South America. Currently the blend is composed of 50% Costa Rica El Conquistador and 50% Colombia Huila Palestina. In Costa Rica La Minita owns the processing center where the cherries are collected and processed from the smallholder farmers. In Palestina the farmers process the coffee on their farms and sell it as dried parchment.
ROASTERS
The types of coffees we source for Daybreak are our favorites to roast because they are consistent and reliable - this is what washed process coffees are known for. We aim to create a balanced flavor profile, a touch of roasty flavors, full developed sweetness, and a touch of acidity to give it some play.
COFFEE LOVERS
Washed process coffees roasted light provide a cup profile that has a little more crisp acidity, so you will pick up on notes of baked apple, praline, and citrus. Bitterness is low, and the body is medium. This is for the coffee lover who enjoys a crisp cup, something with a little character and liveliness. This coffee performs best on manual brew methods and auto-drip. We would not recommend this for espresso or cold brew.
